Spanish Tortilla with Asparagus and Fish Spanish Tortilla is a traditional dish that is often served as a main course or as a tapas. It is a hearty and delicious meal that can be enjoyed any time of the day. In this recipe, we add asparagus and fish for extra flavor and nutrition.
Peel and thinly slice the potatoes and onion. Heat 2 tbsp of olive oil in a frying pan over a medium heat, add the potatoes and onion and cook for 15-20 minutes or until the potatoes are soft. Drain any excess oil. Cut the fish into small cubes and sauté with the asparagus over high heat in a separate pan. Remove from heat and set aside. Beat the eggs in a bowl and season with salt and black pepper. Then add the potato and onion mixture, the fish and asparagus and mix everything together. In a non-stick frying pan pour in 2-3 tablespoons of olive oil and heat over medium heat. Pour in the egg mixture and cook for 8-10 minutes, or until the underside is golden brown. Place a large plate over the pan and flip the tortilla. Slide the tortilla back into the pan and cook the other side until golden brown. Serve hot or cold, with a lightly dressed green salad if desired.
