Mango Cupcakes

These Mango Cupcakes are a perfect combination of sweet and tangy, with a moist cake-like texture. The diced mangoes in the batter add a tropical twist to the classic vanilla cupcake. 1. Preheat oven to 350°F (180°C).
2. In a bowl, sift together the flour, sugar, baking powder, baking soda, and salt.
3. In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract.
4. Slowly whisk the dry ingredients into the wet ingredients until smooth.
5. Fold in the diced mangoes.
6. Place the cupcake sleeves into the muffin tin, and pour the batter into each cupcake sleeve until it is 3/4 full.
7. Bake for 18-20 minutes or until a toothpick comes out clean when inserted into the center of the cupcakes.
8. Remove the cupcakes from the oven and let them cool on a wire rack.
9. In a small bowl, mix together the icing sugar and 1 tbsp of milk until smooth. Add more milk as necessary to reach your desired consistency.
