Peanut Crusted Fish with Egg Sauce

This recipe is a perfect combination of peanuts, eggs, and fish. The crispy peanut crust on the fish goes perfectly with the silky egg sauce.

1. In a food processor, blend the peanuts until they are finely chopped. Transfer the peanuts to a shallow bowl.
2. Beat the eggs in another bowl and season with salt and pepper.
3. Coat each fish fillet in cornstarch, then dip them in the egg mixture, and coat them with the chopped peanuts.
4. In a large pan, heat the oil over medium-high heat. Fry the fish fillets until they are golden brown and crispy, about 3-4 minutes on each side.
5. For the egg sauce, whisk together the remaining eggs and add to a skillet over medium heat. Keep stirring until the eggs are cooked to a custard-like consistency, about 2-3 minutes.
6. Place the fish fillets on a plate and pour the egg sauce on top of them. Serve immediately and enjoy!
