Sweet Potato Sausage Stew This hearty and flavorful stew combines the sweetness of the sweet potatoes with the savory sausage, perfect for a satisfying meal during the colder months.
Heat a large pot over medium heat and add a drizzle of oil. Add the sausage to the pot and cook until browned and cooked through. Remove the sausage from the pot and set aside. In the same pot, add the carrots and cook for about 5 minutes until slightly softened. Add the sweet potatoes and cook for another 5 minutes, stirring occasionally. Stir in the peas and cook for an additional 2 minutes. Add the cooked sausage back to the pot. Pour in enough vegetable broth (or chicken broth) to cover the ingredients. Bring to a simmer. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the vegetables are tender. Stir in the spinach and let it wilt for a couple of minutes.
